Meals for May 7-13

  1. From the Fine Cooking that just arrived: Coffee-rubbed pork tenderloin with watermelon relish.
  2. Chicken Gyros
  3. Lemon Chicken pasta salad
  4. Hot dog dippers–looks like this was in lots of people’s newspapers this week…sounds like a fun meal for he kids, but using homemade pizza dough. With corn on the cob.
  5. Grilled Garlic Chicken and Spinach Pizza….something like this, but with homemade dough.
  6. Turkey cornbread casserole, with extra frozen veggies.

For mother’s day breakfast, we’ll be making orange rolls.

Meals for Apr 9-16

  1. We have some new tart pans, so this Asparagus tart sounds like a good way to inaugurate them. Or maybe this one.
  2. Quinoa with Corn and Zucchini.
  3. Ginger pear chicken with corn on the cob.
  4. Caribbean-Spiced Ribs with grapefruit juice, with baked zucchini fritters.
  5. Baked Falafel and salad.
  6. Pasta with chicken and mushrooms in creamy wine sauce…kind of along the lines of this.

Meals for March 5-11

  1. Easy pork tacos
  2. Anna’s Sausage, Bean and Kale Stew winner of Dinner A Love Story’s recent Go-to Weeknight Dinner contest–lots of good recipes there for ideas for latter. And while I’m adding links for meal ideas, here’s a list of the 100 best Mom Food Blogs…what about Dad food blogs…???

“Mac and Cheese” with Peas and Tomatoes

Boil water and add one pound of pasta – cook according to directions
Save one cup of pasta water for later and when pasta is done – take hot pasta and mix with one cup ricotta cheese

While pasta is cooking, Saute 2 minced garlic cloves in olive oil
Once garlic has softened, add in about a cup of frozen peas (or more if you think your kids really like them) – season with salt and pepper

After the peas have cooked about 4 minutes, add in the reserved pasta water and let simmer for a few minutes (not too long)

Cut a pint of grape tomatoes in half and throw in with the pea mixture (turn off heat)

Then add in the pasta mixed with the ricotta into the pan until everything is mixed together
